Going back to Barbados always puts me in a good mood. Not only do I get to see my family and friends, I get to eat some of the best food in the world. My friend Lauren recommended Primo. I quickly scoured their Instagram page and I knew it was a good choice…not that I doubted her!
Primo is nestled at the edge of the water on the south coast of the island. Upon entering I mesmerized by the chic, sexy and beachy decor. The staff was friendly and their smiles come easily. For the starter, I tried the Spicy Caribbean Goujons. Goujons as the waiter described were leftover cuts of different types of fish and instead of throwing them away, the chef fried them and served them with an authentic Bajan aioli. The fish was fried to perfection and the more you ate the more you wanted to continue to eat it. The kick of spiciness had my lips tingling a little but I still wanted more.
Needless to say I couldn’t wait for the entree!
The choices for entrees were so hard to choose, as my eyes danced from option to option, I just wanted to try them all! Finally I decided the New Zealand chili braised lamb shank with vegetable moussaka and rosemary jus. It was DELICIOUS!!! The tenderness of the lamb, coupled with the vegetable and the rosemary infused broth exploded with rich, savory notes. If you have ever heard of the taste umami, this was it on steroids.
With my starter and entree, there was no room for dessert…..I know right!
Anyone that knows me knows I never leave a restaurant without having dessert. I guess that is my excuse to go back. 🙂
If you ever get a chance to go to Barbados or you are there already, go and eat at Primo, you won’t be disappointed.
